Eric “That nice boy Dana Carpender married” Schmitz and Kim Eidson join Jimmy and Mindy on the Virtual Porch today for coffee and conversation in Episode 18 of “Low-Carb Conversations with Jimmy Moore and Friends!” Pull up a chair and sit for a spell as we talk about the latest low-carb news, answer listener questions and share the following fantastically tasty low-carb recipes:

Eric presents his wife’s amazing Ham and Gorgonzola Salad over at the “Hold The Toast” blog.

Kim sent us this fantastic Mock Potato Salad with the special kick of minced Jalepeños!

1 head fresh cauliflower
1/2 onion chopped
1/3 cup sugar free relish or chopped sugar free pickles
1-2 pickled jalapeno slices finely diced (the key to great salad, not
spicy!)
1 cup mayo
1 T yellow mustard
Salt, pepper and celery seed to taste

Cook Cauliflower until tender and chop in small pieces
Add remaining ingredients and mix until well blended
Chill to blend flavors
Enjoy!

    I enjoyed the podcast..

    Kim, my T2 diabetic husband wouldn’t go low carb either.. his $!*&&%! doctor told him to eat as he pleases and just adjust the insulin…sadly, my husband ate as he pleased until the day he died…at age 51. I hope your husband can be convinced that food is not more important than a longer healthier life. My best wishes.

    Thanks everyone for this interesting podcast. Just this morning, my friend, in remission from cancer, said: Mum is now 94. It is amazing because she eats all the wrong things like full cream milk and butter. Luv

    I called the American Diabetes Association this morning and cancelled my membership. When she asked why I was cancelling I said “two words – Hope Warshaw”. She did not seemed surprised. I hope that other people are doing the same thing.

        You’re so welcome. I’ve been a diabetic for several years and never got control of my blood sugar until I went low carb. No more crazy highs and scary lows. My sugar stays like a small rippling wave all day and my A1C is now 6.0. I’m sorry that I took so long to get off of the ADA’s “old dogma” of high carbs and low fat.
