EILEEN’S LOW-CARB FAUX POTATO SALAD
Summertime is Potato Salad time for many of us. With this recipe you can enjoy the taste of traditional potato salad without the nasty blood sugar spike and subsequent weight gain or stall. Everyone loves this new summertime favorite! I love this excellent low-carb dish and have brought it to many summer events. Faux Potato Salad, using cauliflower.
1 head cauliflower
1/2 red onion-chopped
1/2 green pepper-chopped
3 stalks celery-chopped
5 hard boiled eggs-3 chopped, 2 sliced for top
1 cup mayo
1 tbsp. mustard
3 dill pickles-baby dill-chopped
Steam cauliflower for about 20 minutes. Run under cold water to stop cooking. Drain well. Once cooled, chop into bite size pieces. Combine all ingredients in large bowl, saving 2 sliced eggs for top. Chill in fridge for 1 hour. Serve and ENJOY!
